We eat breakfast everyday, my husband insists on having sausage for “the most important meal of the day”. I don’t complain; how many wives can say their husbands cook them breakfast every morning? I’m a blessed girl. Every now and again we find ourselves with leftovers – whether it’s sausage or any other meat, and I just can’t bring myself to waste good food. If God has blessed us with it, we should use it to the full potential. This week I made this quiche with leftovers I had on hand in the fridge – it’s a quick-to-make meal and delicious! Get creative with your leftovers; you’ll be surprised how much money you save and how happy your loved ones will be at the dinner table!
Recipe for “Lemme Quiche Ewe”:
Spray a torte or pie pan with non-stick spray. Line it with a pre-made 9″ pie crust. Finely chop a medium onion, sprinkle over crust evenly. Use leftover sausage links (chopped) or bacon (crumbled), sprinkle evenly over onion. Grab a head of broccoli out of the garden (or freezer, whichever you have handy) and add to meat and onion. Cover with 1 1/2 cups of shredded mild cheddar cheese. In a separate bowl whisk together 6 eggs and 1 cup of whole milk. Pour over entire dish. Bake at 400 degrees for 15 minutes, reduce heat to 350 and continue to bake for 40 more minutes or until egg is set. Serve with salad or fruit and delight in your leftovers-used-wisely and the money you saved!
